Pink Bourbon double fermentation
Located in the beautiful mountains of Narino, Marcel has a farm filled with fruit trees, other crops, and bushes. He is a young, dedicated farmer and a real example of new generation coffee farmers. Microlots, different varieties, and experimenting with fermentations. all to discover new boundaries in how to produce even better coffee.
We asked Marcel for experimental coffees and let him decide what we should pay for them. In this way, Marcel has full control over the product he produces. So for this coffee, he chose a double fermentation process. The full cherries were put in a lactic fermentation tanks for 96 hours. Then they got depulped, before the second fermentation process.
